My husband always ordered the same thing when we went out to Mexican restaurants for dinner. Chili Relleno. I was never a huge fan until I found this recipe. And as always I added my own flair to it! I like a little more spice and a smoky flavor.
Not Your Usual Casserole Recipe
Who doesn’t love a cheesy, hot, meaty casserole? But there are only so many times you can serve the same tater tot concoction. Am I right?!? With this recipe, you can have all the ease of cooking a casserole. But you’ll wow them with something new. And you won’t even have to go out to get the amazing flavor of a chili relleno!

Green Chilis ~ All the Flavor Without the Heat
There are many types of chilis out there. And not all of them are created equal. As I’m sure you know there are two distinct groups of chilis; HOT and won’t melt your brain. I prefer the latter. I actually like to taste my food thanks. This casserole recipe uses the more flavor, less heat green chili known as the Anaheim. The Anaheim green chili was brought to California from Mexico in the early 1900s and bred with more mellow varieties to appeal to the American palate. In other words

Easy Chili Relleno Casserole
Ingredients
- 1 lb Ground Beef
- 1/2 Onion (chopped)
- 1 27oz Can of Whole Green Chilis
- 1 Cup Milk
- 1/4 Cup Flour
- 3 Eggs
- 1 1/2 Cup Shredded Mexican Cheese Blend (jack & cheddar)
- 1 1/2 tsp. Cumin
- 3/4 tsp. Salt
- 1/4 tsp. Pepper
- 1/8 tsp. Ground Chipotle Chile
Instructions
- Pre-heat your oven to 375 F. Brown hamburger in large skillet on medium, add chopped onions. Cook until brown and onions are soft. Remove from heat, then add cumin, chipotle, salt, and pepper. Set aside. Prepare 3/4 of the green chilis by slicing down the side so they can be spread out flat on the bottom of a casserole dish or square glass baking pan. Layer the ground beef mixture over the chilis. Top with cheese. Chop the remaining green chilis and layer on top of the cheese. In a medium bowl whisk together the milk, eggs, and then the flour. Pour this mixture over the casserole. Bake in center rack of oven for 35 minutes. Enjoy!
