Easy Blueberry Muffin Bread
What happens when you forget you tossed your rusty muffin pan out and forgot to replace it? Blueberry muffin bread!
- 1 1/2 C Flour
- 2/3 C Sugar
- 2 tsp Baking Powder
- 1/2 tsp Salt
- 1/2 C Milk
- 1/3 C Vegetable Oil / Melted Coconut Oil also works
- 1 Large Egg
- 1 tsp Vanilla Extract
- 1-2 C Fresh or frozen Blueberries
Pre-heat the oven to 400 degrees F.
Grease and flour your favorite bread pan
In a large bowl whisk all dry ingredients together well.
In a medium bowl whisk together all wet ingredients except blueberries.
Pour wet ingredients into dry and mix until combined. The batter should resemble a thick cake batter. Once mixed fold blueberries gently into batter. Stir just enough to get the berries throughout the mix. Be careful not to over mix. I prefer frozen berries as they seem to stay together well.
Pour batter into prepared bread pan. Bake in center rack of the oven for 60 minutes or until a toothpick comes out clean.
Carefully remove from pan and cool on a cooling rack.
