Easy Blueberry Muffin Bread

What happens when you forget you tossed your rusty muffin pan out and forgot to replace it? Blueberry muffin bread!

  • 1 1/2 C Flour
  • 2/3 C Sugar
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 C Milk
  • 1/3 C Vegetable Oil / Melted Coconut Oil also works
  • 1 Large Egg
  • 1 tsp Vanilla Extract
  • 1-2 C Fresh or frozen Blueberries


  • Pre-heat the oven to 400 degrees F.
  • Grease and flour your favorite bread pan
  • In a large bowl whisk all dry ingredients together well.
  • In a medium bowl whisk together all wet ingredients except blueberries.
  • Pour wet ingredients into dry and mix until combined. The batter should resemble a thick cake batter. Once mixed fold blueberries gently into batter. Stir just enough to get the berries throughout the mix. Be careful not to over mix. I prefer frozen berries as they seem to stay together well.
  • Pour batter into prepared bread pan. Bake in center rack of the oven for 60 minutes or until a toothpick comes out clean.
  • Carefully remove from pan and cool on a cooling rack.
  • Serve and enjoy!
